The Craft

The trick with a blueberry bread is keeping the berries intact through the bake. We toss our blueberries in a little flour before folding them into the batter so they stay suspended and juicy rather than sinking or bursting. Lemon zest is added to the butter and sugar and beaten until it is light and fragrant — that way the citrus is distributed evenly through every slice.
